Self-Raising Flour Blend (containing double acting raising agents for light fluffy bakes)
Wholegrain Flours 70% (Teff, Sorghum, Buckwheat), Tapioca Starch, Potato Starch, Raising Agents (Sodium Bicarbonate, Glucono Delta-Lactone, Disodium Pyrophosphate)
My blend contains no gums so if a recipe calls for xanthan gum then add it, or replace with half as much psyllium powder instead. If you are used to baking with other gluten-free flours check the ingredients and if they contain xanthan gum then you will need to add it to my flour to get the same result.
My flour blend tends not to need as much liquid as other gluten-free flour blends so when using my flour in a recipe add the liquid slowly until you reach the consistency you are used to.
If you are converting a recipe that uses self-raising flour and it calls for additional baking powder or bicarbonate of soda don’t add the additional raising agents. My self-raising flour has strong raising agents and adding more will lead to collapse of the bake (trust me…I’ve done it!).
