|Simple cake mix|
Firstly I would like to say thank you to Amanda at Hill Cottage Bakery for sending me one of her gluten and dairy free cake mixes to try. Click on the link to discover what other delights she has to offer.
As I am currently on a sugar free diet to help combat my constant tiredness, headaches and dizziness, I have been unable to try these, but there are no shortage of chocoholics in this house who were very happy to oblige. Not least my coeliac daughter…who is currently off dairy with much improved symptoms.
The first thing to say is how beautifully packaged these mixes are. Simple instructions on the reverse along with a piece of baking paper inside make the job very easy indeed. All you do is add eggs and oil to the mix, give it a whisk and it is ready to go in the oven for 15 minutes. I didn’t have a 7inch square tin as suggested in the instructions, so I used my 8inch one, giving me slightly mean and skinny looking brownies!
Having never purchased a cake mix I have nothing to compare this to. I am reliably informed that the cake was the perfect consistancy for a brownie…dense and squidgy. The kids both rated them as 10/10! My husband, however, suggested that they weren’t quite chocolatey enough for his liking but as Amanda also does a dark chocolate brownie mix I am sure she has this covered!
If you are not a natural baker, have recently been diagnosed or are entertaining a gluten and or dairy free friend then you couldn’t go wrong picking up one of these. However, at £7 I can’t say it is something that I would purchase…but then that is because I can whip up a mean brownie using my recipe in not much more time, having had lots of practice!
