Free From Fairy gluten-free self-raising flour

OR 170g Free From Fairy plain flour plus 1 3/4 tsp baking powder

To serve:

cooked until crispy (I used streaky for extra crispiness)
Maple syrup
Instructions
Switch on your waffle machine
Place the egg yolks in one bowl and the whites in another
Add the milk, melted butter and vanilla to the egg yolks and beat until well combined
Slowly add the flour to create a smooth batter, then add the sugar
Beat the egg whites with an electric whisk until you have stiff peaks
Gently fold the egg whites into the batter mixture
Ladle the batter into your waffle maker and cook
While the waffles are cooking, fry the bacon until crisp
Once ready to serve, cut the bacon into pieces using scissors, scatter on top of the waffles and drizzle with maple syrup
