Luxurious gluten-free Belgian waffles with crispy bacon and maple syrup. These are made with the Free From Fairy's wholegrain gluten-free (and rice-free) flour blends.

Gluten Free Belgian Waffles With Crispy Bacon & Maple Syrup

Ingredients
 
 

  • 2 medium eggs - separated, preferably organic or free range
  • 220 ml milk - dairy or dairy-free
  • 60 g butter - melted (or dairy free margarine)
  • 1 tsp vanilla extract
  • 170 g Free From Fairy gluten-free self-raising flour - OR 170g Free From Fairy plain flour plus 1 3/4 tsp baking powder
  • 20 g sugar
  • To serve:
  • 12 rashers bacon - cooked until crispy (I used streaky for extra crispiness)
  • Maple syrup

Instructions
 

  • Switch on your waffle machine
  • Place the egg yolks in one bowl and the whites in another
  • Add the milk, melted butter and vanilla to the egg yolks and beat until well combined
  • Slowly add the flour to create a smooth batter, then add the sugar
  • Beat the egg whites with an electric whisk until you have stiff peaks
  • Gently fold the egg whites into the batter mixture
  • Ladle the batter into your waffle maker and cook
  • While the waffles are cooking, fry the bacon until crisp
  • Once ready to serve, cut the bacon into pieces using scissors, scatter on top of the waffles and drizzle with maple syrup
