Zesty Bean Quinoa & Poached Sea Bass

Ingredients

  • 1 Iceland frozen sea bass fillet
  • 1/4 packet Iceland frozen sugar snap peas and baby sweetcorn
  • 1/4 packet Iceland frozen zesty bean quinoa
  • Olive oil for drizzling
  • Lemon juice for serving
  • Salt and pepper

Method

  1. Place the quinoa into a dry frying pan over a low heat and stir occasionally until warmed through
  2. Place the sugar snap pea and sweetcorn mix into a saucepan over a low heat and stir occasionally until warmed through
  3. Place the frozen sea bass fillet into a microwavable container, lightly cover and microwave according to the instructions on the packet
  4. Place the quinoa and vegetables on a plate then add the poached sea bass fillet
  5. Season with salt and pepper to taste, then drizzle with olive oil and a squeeze of lemon juice before serving
