Easter Cupcakes: Chocolate Simnel Cake (Gluten Free)

Ingredients
 
 

  • 170 g butter - or dairy-free spread
  • 170 g coconut sugar - or soft brown sugar
  • 3 medium eggs - free range or organic
  • 110 g plain Free From Fairy gluten free flour - or plain wheat flour
  • 55 g cocoa
  • 1 3/4 tsp baking powder - gluten free if important
  • 1 tsp almond extract - optional
  • 250 g Marzipan

Instructions
 

  • Pre-heat oven to 180 degrees C/ 160 degree fan/ gas mark 4 and line a muffin tray with paper or silicon muffin cases
  • Cream the sugar and butter together until light in colour and fluffy
  • Add the eggs and continue to beat for a further minute
  • Add the flour, cocoa, baking powder and optional almond extract and beat until everything is combined
  • Place a spoonful of mixture into each paper case
  • Divide the marzipan into 12 pieces. Take one piece and flatten it with your thumb and finger to get a rough disk the size of the muffin case
  • Repeat the process 12 times placing a disk of marzipan in each muffin case
  • Place a further spoonful of mixture on top of each disk of marzipan and gently smooth the mixture out
  • Cook in the pre-heated oven for 20-25 minutes until the tops spring back when pressed.
  • Leave to cool, then decorate any way you like (see above for options)
