Gluten Free Soda Bread With Cheese & Sundried Tomatoes

  • 210 g Free From Fairy gluten free self raising flour or 210g FFF plain flour plus 2 tsp baking powder
  • 100 g gluten free oats
  • 1 tsp psyllium husk powder (or xanthan gum)
  • 50 g butter I used goats
  • 100 g cheese I used goats
  • Approx 135 ml full fat milk I used goats
  • 1 tbsp apple cider vinegar
  • 6 pieces sundried tomato, chopped into small pieces


  1. Place the dry ingredients into a food processor and mix well. If you don't have a food processor you can do this by hand in a large bowl but you will need to use oat flour

  2. Add the butter and cheese and whizz until evenly distributed. If you don't have a food processor then rub the butter into the flour mixture then grate the cheese and add it to the mixture

  3. In a small jug or mug combine the milk and vinegar. This should make the mixture curdle...that's fine!

  4. Add the milk mixture slowly to the flour mixture until it comes together into a dough. You may need slightly more or slightly less than I suggest

  5. Finally add the chopped up sundried tomato and work it through the dough

  6. Bring the dough into a ball on a lightly floured work surface

  7. Press down a little and place onto a lined or greased baking tray

  8. Finally, cut a cross shape on top of the dough about the depth of 1 cm.

  9. Place the loaf into a pre-heated oven at 180 degrees C/160 degree fan oven/gas mark 4 and bake for around 40 minutes until it sounds hollow when tapped on the bottom

  10. Eat on the same day you make it, ideally while still hot
