Ginger Fudge Vegan Ice Lollies
These ginger fudge vegan ice lollies are naturally sweetened and perfect for keeping cool in warm weather!

- 8 Pitted medjool dates - It's worth going for medjool here because they are so much sweeter and stickier
- 1 tin Organic coconut milk - I use Coconut Merchant
- 1 tsp Vanilla extract - I make my own to be sugar free
- 1 tsp Ground ginger
Place all the ingredients into a high power blender. I use the Optimum Vac 2. Blend until completely smooth
Divide the mixture between 6 lolly moulds
Place in the freezer for at least 6 hours until frozen
To remove from the moulds run under cold water for a few minutes until, pulling gently, the ice lolly comes out.
