Easy paleo shortbread

Orange & Chestnut Shortbread

Ingredients

  • 40 g chestnut flour
  • 35 g cassava flour not the same as tapioca starch
  • 50 g softened butter
  • 10 g honey
  • 1/4 tsp good quality orange extract

Method

  1. Mix all the ingredients together until a dough forms
  2. Divide the dough into 6 pieces and roll into balls
  3. Grease or line a baking tray and place the balls onto the tray
  4. Gently flatten each one to approx. 5cm diameter
  5. Bake in a pre-heated oven at 180 degrees/160 degree fan/gas mark 4 for 8 - 10 minutes
