Raw chocolate cheesecake with avocado

  1. Place the dates for the topping and the dates for the base in separate bowls and cover with boiling water. Allow to soak for at least 20 minutes
  2. Once soaked, drain the dates and place them back in their bowls
  3. To make the base place all the ingredients into a hand held chopper or food processor and blend until sticky
  4. Press the mixture into 4 ramekins
  5. To make the topping place the ingredients into the same machine and blend until smooth. You will probably have to scrape the sides down often
  6. Divide the mixture between the four ramekins and place in the fridge until required
  7. Serve scattered with cocoa or chocolate chips/sprinkles
