Gluten Free Cheese Scones

  • Switch the oven on to 220 degrees C (200 degree fan). Put a large baking tray into the oven to warm up
  • Place the dry ingredients into a food processor and mix until well combined. If you don't have a food processor put the dry ingredients into a large mixing bowl
  • Cut the cheese into small cubes and add that to the dry ingredients. Process until you have a breadcrumb like texture. If you don't have a food processor finely grate the cheese and add it to the dry mix.
  • Add the milk and lemon juice and process again until the mixture starts to come together into a dough. If doing by hand combine all the ingredients by hand. This will warm the cheese and allow the dough to come together
  • Empty the dough from the food processor onto a clean floured work surface and knead into a smooth dough
  • Form into a large circle approx. 4-5cm thick
  • Using a 5cm diameter smooth edged cutter cut out your scones
  • Reform the dough and continue to cut out the scones until all the mixture is used up
  • Remove the hot baking tray from the oven and place the scones onto it
  • Bake in the pre heated oven for 15 minutes until risen slightly and golden
