Vegan Date Bars With Ginger

  • 200 g dates - pitted
  • 50 g crystallised ginger
  • 25 g quinoa flakes
  • 25 g sesame seeds
  • 2 tsp ground chia seeds - Or flax seeds (I buy golden linseed and grind them in my coffee grinder)


  • Place all the ingredients into a food processor and blend until the mixture starts to clump together
  • Place the mixture onto a large piece of baking paper and roll into a ball, then form into a square shape
  • Fold the baking paper over the mixture and roll over it with a rolling pin until approx. 1cm thick
  • Leave to harden for a couple of hours before cutting into 'fingers' approx. 1cm by 5cm
