The Story Behind My Award Winning* Gluten Free Flour Blend
As a scientist and mum of a child with coeliac disease, food allergies and intolerances I developed my unique whole grain gluten free flour without rice to nourish her with wholesome nutritious food.It’s important for me to know that she is getting vital nutrients along with protein and fibre whenever she eats, and having found no suitable flour blends on the market I created my own.
It took two years to develop but now I know that whatever I make for her, from pasta to bread, cakes and pastry she is getting some goodness with every mouthful.
On its own it can be used to make:

- Pizza bases
- Pastry (shortcrust, rough puff, choux and Danish) and more
With the addition of baking powder (1tsp per 100g) it can be used to make:

How do I store it?
The flour should be stored in an air tight container. It has a shelf life of 12 months but this can be extended by storing the flour in the freezer.

The best gluten-free flour I've used...
My order arrived this morning and I've just tried my first loaf with Free From Fairy flour and the recipe from her website... for the first time in years I have proper brown bread! I used aquafaba (liquid from a tin of butter beans) instead of the eggs and it worked perfectly. It looks like real bread, tastes like real bread, wonderfully crusty with soft, light inside and a good, tasty but not overpowering flavour. And easy to make. After so many attempts with various blends that never came out right, I'm absolutely delighted.
Edit: After trying a few more recipes I can confidently say this is the best gluten free flour I have used. It's easy to work with and tastes great. It makes the perfect crust for quiche with the shortcrust pastry recipe in Vicki's ebook - maybe even better than wheat! It's not just "good for gluten free", this is seriously good flour in its own right. I now look forward to making FFF flour a regular purchase.

Other flours are mostly rice based which is bad news! I really like the honesty which Vicki shows in all her products and any communication I have with her
I've made so many things with it! Victoria Sponge, Mince pies, little marzipan cakes, and yesterday I made an amazing ginger cake from Glutenfreecuppatea :-)) If I was clever enough I would post a picture! Nothing made with wheat in our house!
No rice = no arsenic
I've been desperate to find a gluten free flour that doesn't use rice flour (I'm concerned about arsenic levels in rice, and the amount of rice flour used in gluten free food). I was so excited when I found this flour. I've used it so far for cakes, waffles and breads and all have been amazing. An added bonus is that it's wholegrain. I love it. I can highly recommend it.

Have used the flour to adapt my cooking to suit my husbands dietary needs from pies, pasties, scones and cakes to using it as a thickening agent in sauces, stews and casseroles.

Having met Vicki at a Free From food show, we decided to try her flour as I was also concerned about the amount of rice in my gluten free daughter's diet. It did seem expensive compared to some supermarket flours (although they have rice flour in) but it is well worth the money. The flour is tasty and hasn't crumbled like others have. We recently made cupcakes to take to a party as between them my children are gluten, wheat, dairy, soya, egg, banana, kiwi, tomato and sulphite free. We used a recipe from Vicki's website and made very tasty chocolate cupcakes. Well worth the money and this is what I will be using going forward for the kids.
I love your flour. I have used both self-raising and plain flour and I would continue to buy even if the price increased.
It performed just as well as others I've tried and I didn't need to use any additional raising agents
I've made sausage rolls, mince pies and banana bread with it so far.

The flour is lovely to work with and...dare I say it on this site..! it works beautifully in a bread maker, too!
I use the flour for bread making all the time and it's the texture which is so great, especially the crust which, with other flours, never gets that non-gluten feel to it; gorgeous.

The Free from Fairy Flour is exceptional and has transformed my gluten free baking for my daughter with coeliac disease.
Both the self raising and plain flours perform much better than others meaning that I can use them just like wheat based flours. Most importantly they are actually gluten free rather than having low levels of gluten. My daughter remained unwell for years after diagnosis and moving to a gluten free diet and only eliminating processed food and commercially produced substitutes has resulted in her being well again.
I use the flours in all my recipies - cakes, biscuits, breads, pastry, batter, sauces and gravy. My non coeliac extended family also thoroughly enjoyed their gluten free Christmas!

I decided to start baking my own bread recently. Being coeliac and vegan it was difficult finding a decent brand without egg and that had more than 6 slices that would instantly break up when getting it out the bag. I came across this site and thought I would give it a go. I ordered 2 packets to start. My first 2 attempts failed. This did not put me off. I invested in a tin with a lid to ensure I would eventually nail it. I then ordered 6 packs. I am so glad I persevered as this is the best bread ever. I do not add sugar to the recipe as I avoid it in my diet and it is so good!! It toasts perfectly. Kudos to you free from fairy. I will never buy shop bought bed again.

I purchased this at Christmas and made a fantastic fruit cake. I have since made scones, muffins, biscuits. I love this flour and am thankful for that more wholesome feel rather than the white gluten free flours in the supermarket. Yes it does cost a bit more but the results have been worth it.
I have just ordered my second lot and am looking forward to experimenting more with my sugar free baking.
As I’m gluten and lactose free it’s really hard to get anything when I’m out. I can now bake healthy versions and take them with me.
I never have bread as not keen on gluten free so have also purchased the bread mix to try. I will let you know how that goes.

FANTASTIC flour, for those of us that are Rice/Gluten intolerant it’s a game changer. To get anything rice free is a joy. I use it to make sauces, for example cheese sauce and it doesn’t leave an unwelcome flavour as other gf ingredients do. I must use it more, but I’m a novice/lazy baker. Highly recommend, a great product.

I first tried this flour at a blogging event. I knew that some flour had been provided and I asked the organiser at the end of the day what had happened to it. I was told it was used in all the cakes and biscuits we’d been eating all day. You Are Kidding Me I said! The flour is so good I had had no idea. The Free From Fairy flour is amazing. Its easy to work with and the results are fantastic. Having a corn/gluten/oat free need, this flour is the only flour that my daughter can use. Best GF bread ever! Have tried processed brands but been unhappy with all the added rubbish. Have also tried making my own from other GF flours but the taste was poor. The loaf I just made from Free From Fairy flour was just lovely, texture, taste everything, and has frozen really well. So simple to make too.. just need a high-sided loaf tin now!
