The Story Behind My Award Winning* Gluten Free Flour BlendAs a scientist and mum of a child with coeliac disease, food allergies and intolerances I developed my unique whole grain gluten free flour without rice to nourish her with wholesome nutritious food.
It’s important for me to know that she is getting vital nutrients along with protein and fibre whenever she eats, and having found no suitable flour blends on the market I created my own.
It took two years to develop but now I know that whatever I make for her, from pasta to bread, cakes and pastry she is getting some goodness with every mouthful.
On its own it can be used to make:
- Flatbreads (wraps)
- Pizza bases
- Pastry (shortcrust, rough puff, choux and Danish) and more
With the addition of baking powder (1tsp per 100g) it can be used to make:
- American pancakes
- Soda breads
- Waffles and more
One bag of flour is all you need for all your baking.

How do I store it?
The flour should be stored in an air tight container. It has a shelf life of 12 months but this can be extended by storing the flour in the freezer.
Lovely Tasty Quick Bread Alternative!
This is a lovely tasty and quick bread alternative, thank you Vicki. I like to make it alongside a 'picky tea' or with soup or a stew. My only problem with the recipe is the 'leave to cool' part! 🙂 I can never resist the warm end of a fresh baked loaf!
I always feel left out when I make it for the family. So tonight I made pizza for them the usual way & used your plain flour to make mine. I expected to have to put a jacket potato in the oven as I'd anticipated the base failing (I've tried alternative flours before) but no! I've just had the most delicious little pizzas.
They've all tried a piece and really liked it.Ff

The bread holds together and tastes so much better than the stuff I used to make with other gluten-free flours.
I've tried the bread recipe for a bread-maker (gluten-free, dairy-free, egg-free, nut-free, soya-free, Vegan).
No rice = no arsenic
I've been desperate to find a gluten free flour that doesn't use rice flour (I'm concerned about arsenic levels in rice, and the amount of rice flour used in gluten free food). I was so excited when I found this flour. I've used it so far for cakes, waffles and breads and all have been amazing. An added bonus is that it's wholegrain. I love it. I can highly recommend it.
This flour is very good , even though it is slightly darker than ordinary flour.
My cooking skills are not brilliant but cakes were fine.
I've made ordinary sponge cake with it.
Brilliant flour! Being intolerant to gluten and rice it is impossible to find a flour to bake with until I discovered yours!

I was looking for a wholemeal gluten free flour and this flour ticks all the boxes! It is very tasty and doesn’t give that ‘white carbs’ suger rush you get with some gluten free flours.
I’ve also used Dove’s and it performs just as well. I think things made with free-from-fairy flour have more flavour and texture.
I have tried bread, pancakes and my favourite courgette and lime cake.
Best 'free from' flour I've ever used...
I have been using Vicki's flour for a couple of months now and I have to say that it's the best 'free from' flour I've ever tried. So far, we've made baguettes, sauces, chocolate cake, brownies and pancakes with this flour and it doesn't have the grittiness you find in blends rich in rice flour. Our pancakes taste a lot better than before with this blend and I won't go back to other flour blends!
