I've been making gluten free recipes for 20 years.
Back in my 20's I was diagnosed with Irritable Bowel Syndrome.
At the time I wasn't really offered much help but slowly I realised that it was made worse by eating wheat.
For many people just starting out with gluten free baking it can appear daunting.
However, through my articles and recipes I hope to show you that gluten free baking doesn't need to be difficult.
In fact, if you use my flour blend you'll find that for most things you can directly substitute it for wheat flour.
I created my wholegrain gluten free flour blend when my daughter was diagnosed with coeliac disease.
I wanted one blend of flour that I could use in all my baking. It had to be highly nutritious and not contain rice flour.
Rice contains arsenic. When my daughter moved to a gluten free diet at the age of two I realised that most food she was eating was rice-based.
Since arsenic accumulates in the body I didn't want to feed her too much rice.
My solution was to create my own unique wholegrain flour blend.
I use it to make everything from gluten free pancakes to pastry, cakes, bread and even pasta.
