I created my wholegrain gluten free flour blend when my daughter was diagnosed with coeliac disease. I wanted one blend of flour that I could use in all my baking, that was highly nutritious and didn't contain rice flour.
Rice contains arsenic and when my daughter moved to a gluten free diet I realised that most food she was eating was rice-based.
Since arsenic accumulates in the body I didn't want to feed her too much rice. My solution was to create my unique wholegrain flour blend.
I use it to make everything from gluten free pancakes to pastry, cakes, biscuits, bread and even pasta.
